Fresh-harvest olive oil, twice a year

Olio Nuovo is extra virgin olive oil at its freshest. We harvest at the very start of the season and process our olives within 12–24 hours, so what reaches your kitchen still has the bright aroma and lively finish you only get from new oil.

Freshness shouldn't only happen once a year, so we bring you two harvests: our Australian harvest from the Macedon Ranges in May, and selected Northern Hemisphere harvests in December.

Filtered or unfiltered?

Unfiltered is the traditional way to enjoy Olio Nuovo: slightly cloudy, full of flavour, and at its best in the first few months. Filtered is clear and bright, and still tastes unmistakably fresh.

How to use it

Use it where you'll really taste it: drizzled over crusty bread, soups, salads, pasta or grilled vegetables. That peppery kick at the back of your throat comes from naturally occurring polyphenols, and it's one of the best signs you're tasting genuinely fresh oil.
