Meet Davide Bruno
Davide Bruno is the master miller behind every harvest at Olio Nuovo. Originally from Italy, Davide has spent his career perfecting the craft of olive oil production, and he's been part of the Olio Nuovo story since 2018.
His path started in some of Italy's most respected olive-growing regions. He trained and worked at Oleificio Sociale Dol.Va.Pre. in Imperia, one of the historic olive oil hubs of Liguria, before moving on to Arteolio Frantoio in Tuscany. Along the way he also spent time pruning groves at Moulin Oltremonti in Corsica, deepening his understanding of the tree itself, not just the milling process.
Davide holds professional tasting certifications from O.N.A.O.O. (Organizzazione Nazionale Assaggiatori Olio di Oliva), Italy's national body for olive oil tasters — a qualification that means he can detect the subtlest differences in flavour, aroma and quality between batches.
Every year, Davide travels from Italy to Australia to personally oversee the sourcing and milling of each seasonal Olio Nuovo release. He works closely with the grove team from harvest through to bottling, making sure every batch meets the exacting standards he's built his career on. It's this hands-on involvement, harvest after harvest, that gives Olio Nuovo its consistent quality and true Italian heritage.
