From Grove to Bottle: How Olive Oil Is Actually Made

Most people have a vague sense that olive oil comes from olives. Beyond that, the process is surprisingly unfamiliar — even to people who use olive oil every day and care genuinely about what they eat.

Understanding how olive oil is made doesn't just satisfy curiosity. It explains why freshness matters so much, why some oils cost more than others, and why the decisions made in the hours and days after harvest have such a dramatic effect on what ends up in your bottle.

Here's the process, from tree to table.

It Starts With the Tree

Olive trees are extraordinarily long-lived. Ancient groves in the Mediterranean contain trees that are hundreds, sometimes thousands, of years old — still producing fruit, still yielding oil. A well-tended olive tree can outlive the people who planted it by many generations.

In Australia, most commercial olive groves are relatively young — planted over the last few decades as the domestic olive oil industry developed. Our grove in the Macedon Ranges is part of this newer generation of Australian olive cultivation, but the trees are now established and producing fruit with genuine character.

Olive trees are also, by agricultural standards, relatively low maintenance. They tolerate poor soils and dry conditions better than most fruit trees. What they need is the right climate — warm summers for fruit development, cold enough winters to trigger flowering, and ideally an elevation or aspect that moderates extreme heat.

Flowering and Fruit Set

Olive trees flower in spring — small, cream-coloured flowers appearing in clusters on the previous year's growth. The flowers are wind-pollinated, and a good spring — mild, not too windy, not too wet — is important for successful fruit set.

After pollination, the tiny olives begin to develop through summer. At this stage they're hard, green, and intensely bitter — the polyphenols that will eventually give great olive oil its character are at high concentrations in the young fruit.

Through late summer and into autumn, the fruit swells as it accumulates oil. This is when harvest timing becomes the central decision of the olive oil producer's year.

Harvest

Olives can be harvested by hand, by mechanical rake, or by large harvesting machines that straddle the tree rows and shake the fruit loose. The method depends on the scale of the operation, the terrain, and the priorities of the producer.

At Olio Nuovo, we harvest carefully — prioritising speed from tree to mill over volume per hour. Olives that are damaged during harvesting, or that sit in bins for too long after picking, begin to ferment. That fermentation shows up in the oil as off-flavours and elevated acidity. The best oil comes from fruit that moves from the tree to the press as quickly as possible.

We harvest early in the season — before full ripeness, when polyphenol levels are at their peak and the oil has maximum flavour intensity. This means lower yields than a late harvest, but oil with a character that simply isn't available from fully ripe fruit.

The Mill: Crushing and Malaxing

Once at the mill, the olives are first cleaned — leaves and twigs removed, fruit washed. Then they go to the crusher.

Modern olive mills use a hammer crusher or disc crusher to break the fruit into a paste — skin, flesh, and pit all together. This paste then goes into a malaxer, a slow-moving mixer that works the paste for 20 to 40 minutes. Malaxing allows the tiny oil droplets in the paste to combine into larger droplets that can be separated more easily.

Temperature during malaxing is critical. Warmer temperatures increase oil yield but degrade quality — the heat drives off aromatic compounds and can damage polyphenols. "Cold pressing" or "cold extraction" means keeping the paste below 27°C throughout this process, preserving the volatile flavour compounds and the polyphenols that make great olive oil worth paying for.

Separation

After malaxing, the olive paste goes to a centrifuge — a horizontal decanter that spins at high speed and separates the oil from the water and solid material (the pomace) by density.

The oil that emerges at this stage is what will become extra virgin olive oil — if it meets the standard. It's intensely flavoured, slightly cloudy with fine particles, and still warm from the centrifuge. This is the closest most producers get to what Olio Nuovo delivers to our customers.

A second vertical centrifuge may be used to separate remaining water from the oil. Then the oil goes to storage.

Filtering vs. Unfiltered

At this point, most commercial producers filter the oil — removing the fine olive particles that give freshly pressed oil its cloudiness and some of its flavour intensity. Filtration extends shelf life and gives the oil a cleaner, more consistent appearance.

Olio Nuovo is unfiltered. The fine particles remain suspended in the oil, contributing texture, flavour, and additional polyphenol content. This is what gives our oil its characteristic cloudiness — not a flaw, but a feature. A sign that what's in the bottle is genuinely fresh and unprocessed.

Unfiltered oil has a shorter window at peak quality than filtered oil — another reason why getting it to our Club members quickly matters so much to us.

Storage and Bottling

Most olive oil is stored in large stainless steel tanks after pressing — sometimes for months — before filtration, blending, and bottling. This is where much of the world's olive oil loses the qualities it had when it was fresh.
