FRESH OLIVE OIL BRUSCHETTA

A classic Italian appetizer that highlights the bold, fresh
flavor of Olio Nuovo.

Ingredients

  • 4–6 slices rustic sourdough or ciabatta bread
  • 2 ripe tomatoes, diced
  • 1 garlic clove, halved
  • 2–3 tablespoons Olio Nuovo extra virgin olive oil
  • Fresh basil leaves, chopped
  • Salt and freshly cracked black pepper

Instructions

  1. Toast the bread slices until golden and crisp.
  2. Lightly rub each slice with the cut side of the garlic clove.
  3. In a bowl, combine diced tomatoes, basil, olive oil, salt, and pepper.
  4. Spoon the mixture onto the toasted bread.
  5. Finish with a generous drizzle of Olio Nuovo for a bold, peppery flavor.
