Caprese Salad

CAPRESE SALAD

(known in Italy as Insalata Caprese) is the ultimate tribute to simplicity. Originating from the island of Capri, it is designed to mimic the colors of the Italian flag: red, white, and green.

Ingredients

  • 1 punnet medley tomatoes
  • 1 fresh That’s Amore Cheese Buffalo Mozzarella
  • Handful fresh basil leaves
  • 1/4 cup (60ml) Olio Nuovo Early Harvest Extra Virgin Olive Oil
  • Salt and pepper to taste

Instructions

  1. Thickly slice the tomatoes and the mozzarella.
  2. Place the tomatoes on a serving plate.
  3. Add the slices of mozzarella on top.
  4. Tuck the whole basil leaves in between the tomato and mozzarella slices.
  5. Drizzle over the Olio Nuovo.
  6. Season to taste with salt and pepper.

Serving Tip

Classic Slices: Alternating layers of tomato and mozzarella slices on a platter.

Skewers: Cherry tomatoes and "bocconcini" (tiny mozzarella balls) on toothpicks for parties.

Chopped: Diced into bite-sized pieces for a rustic side dish.

Why It Works

Olio Nuovo’s vibrant, peppery "kick" provides a sharp contrast to the creamy richness of fresh mozzarella. Its intense grassy notes also mimic the scent of tomato leaves, amplifying the natural garden-fresh flavors of the salad.
